La Madeleine de Proust is a French-inspired artisan bakery and pâtisserie — café, bistro and boutique in one — on Carrer d'Anníbal in Santa Catalina. Laurent, a chef by trade, has been building gastronomic projects in Mallorca for more than twenty years; today the house runs one shop and its own production workshop, baking breads, viennoiserie and pastries daily.
